Big Deal Oatmeal Granola Bites

 

This triple-baked recipe turns our protein-packed oatmeal blend (loaded with five premium nuts, five super seeds, and five antioxidant-rich fruits) into deliciously crunchy bites that'll outlast your longest adventure. Perfect for hiking, road trips, or just conquering Monday morning meetings!

 

INGREDIENTS:

  • 2 cups Big Deal Oatmeal (fruits removed and reserved)

  • 2 T. coconut oil or butter

  • 1/3 cup maple syrup, honey, or molasses

  • 1/4 cup nut or seed butter

  • 1 tsp. vanilla extract

  • Pinch of salt

Note: 2 flavor combinations we've enjoyed are Honey/Peanut Butter, and Maple/Almond & Sunflower Seed Butter. Experiment with your favorite sweeteners, oils, and butters.

 

DIRECTIONS:

  1. Heat oven to 375°F. Line cookie tray with parchment.

  2. Remove fruits from Big Deal Oatmeal and set aside. Spread oatmeal on tray and roast 10-12 minutes until golden and fragrant.

  3. In saucepan over medium heat, combine oil, syrup, nut butter, vanilla, and salt until well mixed. Remove from heat.

  4. Stir reserved fruits and roasted oatmeal mix into warm mixture until well- coated.

  5. Press firmly into parchment-lined 8x8" dish (about 2/3" thick). Roast again at 375°F uncovered 10-12 minutes.

  6. Cool completely and chill until firmly set. Use sharp knife to cut into bars or bites.

  7. Spread bars on lined tray and roast final time, 10-12 minutes - a minute or two longer if you prefer a more crunchy texture.

  8. Cool and chill to set.
