Soft and Chewy Brown Butter Oatmeal Loaded Superfood Cookies
Servings: Makes 24 cookies
Time: 40 minutes, plus cooling time
INGREDIENTS
- 4 cups BIG DEAL OATMEAL
- 4 tbsp unsalted butter
- ¾ cup (5 ¼ ounces) dark brown sugar
- ½ cup (3 ½ ounces) granulated sugar
- ½ cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 cup (5 ounces) AP or GF Flour (Pilsbury or Bob's Red Mill 1 to 1)
- ½ tsp salt
- ½ tsp baking soda
Brown butter in a skillet over medium high heat. Keep it moving in the pan with a spatula and when bubbles give way to aromatic browning bits, remove from heat and allow to cool.
Beat eggs with a whisk and combine with with oil, brown sugar, granulated sugar, and vanilla. Whisk in cooled brown butter.
In a separate bowl, whisk flour, baking soda and salt to an even consistency.
Combine wet and dry mixtures and add BIG DEAL OATMEAL. Mix to an even consistency.
Portion .75 oz flattened disks onto parchment-lined baking sheet. Use wet hands to avoid sticky batter.
Bake one sheet at a time at 375°F for 10-11 minutes. Turning once for even baking.
Optional: From just a few inches up, drop tray of hot cookies on to a towel-lined countertop to allow cookie to flatten even more
Transfer to a cooling rack.
Store in airtight container with a slice of bread or GF tortilla for softer, chewier cookie

Hi! I had one of your cookies at Uncommon Market in Asheville, NC and it was the best oatmeal cookie I have ever had! I am looking forward to trying your recipe and seeing if I can make them as good as the ones you serve. I also love your oatmeal and especially as overnight oats. Thanks for a great product!
