Soft and Chewy Brown Butter Oatmeal Loaded Superfood Cookies
Servings: Makes 24 cookies
Time: 40 minutes, plus cooling time
INGREDIENTS
- 4 cups BIG DEAL OATMEAL
- 4 tbsp unsalted butter
- ¾ cup (5 ¼ ounces) dark brown sugar
- ½ cup (3 ½ ounces) granulated sugar
- ½ cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 cup (5 ounces) AP Flour
- ½ tsp salt
- ½ tsp baking soda
Brown butter in a skillet over medium high heat. Keep it moving in the pan with a spatula and when bubbles give way to aromatic browning bits, transfer to a mixing bowl.
Combine brown butter with oil, brown sugar, granulated sugar, and vanilla. Whisk in eggs.
Combine with the dry mixture of flour, baking soda and salt to an even consistency.
Add BIG DEAL OATMEAL and mix to an even consistency.
Portion .75 oz disks onto parchment-lined baking sheet
Bake one sheet at a time at 375°F for 9-11 minutes.
Transfer to a cooling rack.
Store in airtight container with a slice of bread for softer, chewier cookie
