Banana Superfood Muffins

Carrot & Banana Superfood Muffins

Muffins LOADED with Superfoods means you can snack right - at home or on the go.

Servings: Makes 10 muffins

Time: 40 minutes, plus cooling time

INGREDIENTS

Batter:

  • 2 cups BIG DEAL OATMEAL
  • 1 3/4 cups AP flour
  • 3/4 cup brown sugar
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 2 ripe bananas, mashed
  • 2 cups par boiled and shredded carrots

Topping:

  • ½ cup BIG DEAL OATMEAL (remove dried fruits and add to muffin batter)
  • 2 Tablespoons sugar or honey
  • 2 Tablespoons coconut oil or butter, melted

Beat egg with whisk. Add oil, vanilla, and brown sugar. Mash bananas until there are no visible lumps. Combine with wet ingredients. Boil carrots for a few minutes to soften and brighten in color. Cool, shred, and add to wet ingredients. Mix well. 

In a separate bowl, whisk flour, baking soda, baking powder and salt to an even consistency. Combine with wet ingredients and Big Deal Oatmeal, being careful not to over mix. Pour batter into prepared muffin cup-lined muffin tray.

For topping, combine Big Deal Oatmeal with melted coconut oil and brown sugar. Sprinkle on top of batter.

Bake at 400°F for 20-25 minutes.
